Veggie Side Dish: Simple Cabbage Slaw

I love purple cabbage, I even enjoy it raw and plain! This recipe for a simple cabbage slaw still incorporates the raw taste, while enhancing and softening it slightly. This dish only has 4 ingredients and a few spices to gather. It is a bright and crisp side dish that doesn't take too much effort. Plus the purple color is just so beautiful!

Ingredients:
1 small head purple cabbage (or half a larger head) to make about 4 cups chopped
2 tbsp olive oil
2 tbsp lime juice (fresh or bottled)
1/2 tsp maple syrup
1/2 tsp kosher salt
1/2 tsp ground pepper
Instructions:
Chop head of cabbage into bite size pieces (4 cups total)
Whisk together olive oil, lime juice, maple syrup, salt and pepper.
Pour the mixture over the cabbage and toss it until everything is coated evenly.
Let the slaw sit for about 20 minutes to marinate and allow the cabbage to tenderize and release its juices.
Mix the cabbage once more with all of the dressing and juices. Enjoy!
Notes:
This slaw is great as a side all on its own, but would also be fantastic with fish tacos!
