Summer Baking Recipe: Warm Oat Strawberry Crumble

It is officially strawberry season now! While plain strawberries are delicious, I love how jammy they become when you bake them into a sweet treat! This strawberry crumble recipe is low on added sugar, allowing the strawberries to shine. It also uses all real, recognizable, whole food ingredients you can feel good about eating. I hope you try this recipe as the perfect ending to a summer meal!

Ingredients:
For filling:
2 cups quartered (or smaller) strawberries
1 tbsp chia seeds
1/2 tsp lemon juice
1 tsp maple syrup
For crumble:
1 cup rolled oats
1/3 cup whole wheat flour
1 tsp cinnamon
2 tbsp melted coconut oil
1 tbsp maple syrup
Instructions:
Preheat oven to 350 degrees.
Cut the strawberries into quarters (or smaller depending on the size of the berries).
Toss the strawberries with the chia seeds, lemon juice and maple syrup until coated.
Place the strawberries into the bottom of a small baking dish.
Next, in a separate bowl mix together the rolled oats, whole wheat flour, cinnamon, melted coconut oil and maple syrup. Mix this until all the dry ingredients are thoroughly moistened.
Spread the crumble mixture evenly over the strawberries in the baking dish.
Bake for 25-30 minutes until the crumble topping is lightly browned and the strawberries are bubbling. Enjoy!

Notes:
This crumble is great as-is, but if you want to add some protein to this treat, top it with some Greek yogurt!
