Delicious & Healthy Egg Bites: Try This Easy Breakfast Recipe, Perfect for Food Prep

Egg bites have quickly become one of my favorite breakfast options. They offer a nutritious start to the day, help you stay full for hours, and are ideal for meal prep as they can be frozen. Once they are prepped, whether you have only a few minutes in the morning or need an easy breakfast on the go, this recipe will help you have a healthy start to your day.



Ingredients


To whip up these nutritious egg bites, gather the following ingredients (makes approximately 9 bites):


  • 6 large eggs

  • cup 2% cottage cheese

  • 5 slices bacon (cooked and crumbled)

  • ⅓ cup shredded cheddar cheese

  • Salt and pepper to taste (I used about ¼ tsp each)


Feel free to experiment! Add cooked veggies or swap out the bacon. You can change the type of cheese to your preferences as well.


Preparation Steps


1. Preheat the Oven


Start by preheating your oven to 300°F. Place a small rimmed baking sheet or pan filled with water in the oven on the bottom shelf to keep moist air circulating while the egg bites are baking.


2. Prepare the Muffin Tray


Grease a muffin tray with cooking spray or line it with silicone cupcake liners. This ensures your egg bites won’t stick, making for easy removal and cleanup.


3. Combine the Ingredients


In a blender, place the cracked eggs, cottage cheese, shredded cheddar cheese (reserving a small amount to sprinkle on top before baking), salt and pepper. Blend together for about 30 seconds until just combined and not too much air is incorporated in the mixture.


4. Fill the Muffin Tray


Pour the egg mixture into the prepared muffin tray, filling each cup about ½ full. It is essential not to overfill, as the egg bites will puff up slightly during baking. Sprinkle crumbled bacon (about ½ a slice of bacon worth) over the top of each egg bite and top with some of the reserved cheese.


5. Bake


Place your muffin tray in the preheated oven and bake for about 30-35 minutes. The bites are ready when they are set and lightly golden on top. To check for doneness, insert a toothpick into the center; if it comes out clean, they are good to go.


6. Cool and Store


Once baked, remove the muffin tray from the oven and let the egg bites cool for about five minutes. Carefully extract them from the tray and allow them to cool fully on a wire rack. These delicious bites can be stored in an airtight container in the fridge for up to five days, or frozen in a freezer bag making them an excellent option for meal prepping. Take care to press out the extra air from the freezer bag, and defrost overnight in the fridge before microwaving for about 45 seconds for 2 bites.

These egg bites are versatile! You can enjoy them plain, serve them with a side of fresh fruit, or add on top of an English muffin.


With approximately 8 grams of protein per egg bite, these yummy treats can help keep you full and energized throughout your busy mornings.
