Summer Recipe Idea: Copycat Pickle de Gallo Salsa

I recently picked up Grillo's Hot Pickle de Gallo salsa at the grocery store, and after the first bite I was hooked. It is a salsa based on cucumbers, and is a mix of salty and spicy, perfect for summer!


I knew I had to recreate the recipe, and I think it tastes super close to the original. I hope you enjoy it this summer. It tastes great with tortilla chips, seeded crackers, or would be delicious on sandwiches too! Anything you like to have salsa or even pickles with!




Ingredients


  • 5 mini cucumbers diced small

  • 1 jalapeno pepper (or to taste) diced small

  • 3 cloves minced garlic (I use 1 1/2 tsp of jarred minced garlic)

  • 1 tbsp onion (I like to use 1 tbsp of dried chopped onion and add about 1 tbsp of water to re-hydrate it)

  • 1/2 cup of boiling water

  • 1 tbsp of kosher salt

  • 1/2 cup of white vinegar

  • 1/4 tsp ground red pepper flakes (or cayenne pepper)

  • Optional: 1/8 cup diced red bell pepper for color


  1. Make the Brine

Before I start dicing the vegetables, I boil 1/2 cup of water. To the boiled water, add 1 tbsp of salt and stir to dissolve. Set this aside.


  1. Dice the Vegetables

Next, dice the cucumbers and jalapeno small and place in a bowl. Add the minced garlic and onion and stir to combine the mixture.


  1. Mix the Salsa Together

The water should now be cooler, so you then add 1/2 cup white vinegar and 1/4 tsp red pepper to the water. Mix this together until combined. Then pour over the cucumber mixture so that the liquid covers all of the vegetables. Refrigerate for an hour or longer before enjoying!
