Sweet Treat: Simple Pantry Granola

When you're in the mood for something with a touch of sweetness, this simple granola recipe hits the spot! It's perfect to sprinkle over yogurt or even just on its own. It is adaptable to what you have on hand in your pantry and your preferences. I added ground flaxseed and chia seeds for fiber and additional nutrients, but these are optional.

Ingredients
Dry Ingredients
1 1/2 cups old-fashioned rolled oats
1 tbsp ground flaxseed
1 tbsp chia seeds
1/4 cup unsweetened coconut flakes
1/4 tsp cinnamon
Pinch of salt
Wet ingredients
2 tbsp melted coconut oil
1/8 cup maple syrup
1/4 tsp vanilla
1 tbsp peanut butter (smooth or chunky both work)

Instructions
Preheat your oven to 325°F and line a baking sheet with parchment paper.
In a medium bowl, mix together oats, flaxseed, chia seeds, coconut flakes, cinnamon and salt.
In a microwave safe bowl, melt coconut oil until it is liquid.
Combine the melted coconut oil, maple syrup, vanilla, and peanut butter. Keep stirring the peanut butter so it melts into the warm coconut oil until the whole mixture is smooth.
Pour wet ingredients over the dry ones and mix until everything is lightly coated.
Spread evenly on the baking sheet and gently press down (this helps clumps form).
Bake 15-20 minutes, rotating the pan halfway through baking, until the granola is lightly browned.
Let cool completely (this is when it crisps up).
Break apart into small chunks and store in an air-tight container.
Recipe Notes
This tastes great sprinkled over some yogurt. I liked adding some chocolate chips on top at the end too!
