Sweet Treat: Frozen Strawberry Yogurt Bites

I saw a matcha strawberry clusters recipe on Instagram by @faithsfresh which looked delicious recently. I wanted to make something similar but a bit less chocolate, and more yogurt forward. This recipe would be perfect for Valentine's Day for a little sweet treat to share! To keep it simple, I tried to make this with minimal ingredients and with things you may already have on hand. Ingredients
1 individual 5.3 oz cup Vanilla Greek Yogurt / or 1 individual cup Low-fat Vanilla Yogurt
About 7 Strawberries diced small
1/4 cup Chocolate Chips (your choice) I used Semi-Sweet but dark would be delicious!
1 tsp coconut oil (optional) for melting with the chocolate chips
Instructions
Dice strawberries and pat to dry on paper towels.
Mix strawberries with the container of yogurt until strawberries are coated.
Prepare a small baking tray that will fit in your freezer with parchment paper.
Drop about 6-8 small clusters onto the parchment paper.
Freeze for about 2 hours.
After 2 hours, melt 1/4 cup chocolate chips (with coconut oil if you'd like) in the microwave. Depending on your microwave's power, I would start trying 30 second increments at 50% power until melted.
Drizzle melted chocolate over the top of the clusters.
Freeze for 30 minutes more to set.

Recipe Notes
Adding a bit of coconut oil to your chocolate chips helps the chocolate to drizzle a bit easier. But it will work without the oil as well!
These clusters will freeze rather hard. Thawing for 10-15 minutes prior to eating will help them soften a bit.
I tried both Greek yogurt and the low-fat regular style yogurt, and they both turn out pretty similarly. I would go with your preference or what you have on hand.
