Summer Recipe Idea: Lightly Sweetened Lemon Iced Tea

Updated: Jun 25

I don't know about you, but in the summer when it's hot out, a refreshing iced tea sounds perfect to me with lunch. I wanted a recipe that had a touch of sweetness, but that wasn't overpowering like some southern sweet teas. This recipe uses liquid stevia for sweetness and lemon juice added to standard English Breakfast tea. Check out the recipe below and let me know what you think!

Ingredients

  • 1 liter boiling water

  • 3 standard size English Breakfast tea bags

  • 12 drops of liquid stevia (I like the dropper from Trader Joe's)

  • 1 tbsp lemon juice (or fresh squeezed to taste)

  • 1 liter cold water

  1. Steep the Tea

First boil 1 liter of water. Once it is boiled, pour it into a 2 liter pitcher. Steep 3 English Breakfast tea bags in the boiling water. I usually leave the tea bags steeping for an hour until the water is room temperature. Cover the pitcher if desired.

  1. Add Stevia and Lemon

Next, remove the tea bags. Then, add 12 drops liquid stevia and 1 tbsp lemon juice to the pitcher. Fill the pitcher the rest of the way with cold water. Give the mixture a stir and enjoy over some ice!
