Recipes I've Loved This Week

I wanted to write a quick post cataloging a few of the recipes I've made over the last week or two, that I loved and would recommend. What is great about these recipes is that they are quick and easy, primarily whole food based, and are great to have on hand when time is short.


  1. The first recipe I tried was three-ingredient banana peanut butter protein bites from Calla's Clean Eats: https://callascleaneats.com/three-ingredient-protein-cookies-gluten-free-low-carb/ These bites were super quick and easy and were a nice treat that included some protein. They tasted a little like chocolate chip cookie dough without worrying about the raw egg. I used vanilla protein powder, included some mini chocolate chips on top, and a sprinkle of salt once they came out of the oven.

  1. Another recipe I made this week was broccoli slaw with homemade coleslaw dressing from Love and Lemons: https://www.loveandlemons.com/coleslaw-dressing/

    I used packaged broccoli slaw to make this extra quick and easy. I followed the dressing recipe, omitting the maple syrup and used celery salt instead of celery seed and salt separately.


    Here is the slightly modified recipe with no added sugar:

    • 16 oz package broccoli slaw

    • 1/2 cup mayonnaise

    • 2 tbsp apple cider vinegar

    • 3/4 tbsp Dijon mustard

    • 3/4 tsp celery salt

    • A few grinds of fresh black pepper


Whisk together the mayonnaise, vinegar, mustard, celery salt, and black pepper until smooth. Pour over the broccoli slaw in a bowl and mix well to coat.

  1. Next I made a great staple to have on hand throughout the week - roasted sweet potatoes made quick and easy in the air fryer. This recipe I found from Piping Pot Curry: https://pipingpotcurry.com/air-fryer-roasted-sweet-potatoes/


    I peeled and diced two medium sweet potatoes into 1/2 inch cubes. I coated them in about 1 1/2 tbsp of olive oil and sprinkled 1/4 tsp garlic powder, 1/2 tsp kosher salt, and a few grinds of black pepper over the top and mixed together. This recipe tasted great, and was ready in less than 20 minutes!

  1. Lastly, I made this berry chia seed spread that I found from @holly.a.henderson on Instagram. This was a really yummy alternative to jam and jelly with much less sugar, and only has three ingredients. This recipe doesn't have a blog post to link to, unfortunately. If you do check out her Instagram post, the only changes I made were swapping out the frozen raspberries to 2 cups frozen mixed berries and simmering them a little longer (around 10 minutes instead of 5 as the strawberries in my mix were pretty large). After simmering, I mixed in 4 tsp of chia seeds and 1 tsp of maple syrup. It was delicious!
