A simple homemade vinaigrette dressing can bring any salad to life and also works as a flavor boost drizzled over quinoa or rice. This recipe only takes a few minutes to make as well which is a bonus! This dressing uses things you likely have on hand and skips all the unnecessary ingredients found in store-bought versions.

Ingredients (for 1 serving):
1 tbsp olive oil
1 tbsp vinegar (white or red wine both work great)
½ tsp Dijon mustard
¼ tsp lemon juice
⅛ tsp salt
⅛ tsp pepper
Instructions
Whisk everything together with a fork until it’s smooth and combined — and that’s it! Use it right away or store it in the fridge for 2-3 days.
This dressing adds delicious, tangy flavor to your greens, grains, or roasted veggies. I hope you enjoy it!
