Ingredients:

  • 1 cup quinoa (rinsed)

  • 2 cups water (or broth for extra flavor)

  • ½ teaspoon salt

  • 1 tablespoon olive oil (optional)

Instructions:

  1. Rinse the quinoa: Place the quinoa in a fine mesh strainer and rinse under cold water for about 30 seconds.

  2. Combine and cook: In a medium saucepan, combine quinoa, water (or broth), salt, and olive oil. Bring to a boil over medium-high heat.

  3. Simmer: Once it starts boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed.

  4. Fluff and serve: Remove from heat and let sit for 5 minutes, covered. Fluff with a fork and serve warm or let cool for meal prep.

Tips:

  • The olive oil is optional, but it helps the quinoa become softer and less sticky — this is helpful for salads or if you're using it for meal prep and storing it.

  • Store cooked quinoa in the fridge for up to 5 days.

  • For extra flavor, cook in vegetable or chicken broth instead of water.
