Quick + Easy Pickle Recipe

Did you know that pickles are super easy to make at home with just a few ingredients? This isn't a traditional canning recipe, so they don't require any extra supplies to make, and last up to a few weeks in the refrigerator. I used this recipe and modified it to remove the sugar and dill which I don't typically have on hand. These are crisp and delicious in about an hour's time in the fridge!

Ingredients
5 mini cucumbers
3/4 cup water (cool or room temperature is fine)
3/4 cup white vinegar
1 1/2 tsp salt
1/4 tsp cayenne pepper or crushed red pepper
1/2 tsp ground black pepper
2 cloves minced garlic (I use the jarred kind)
1 bay leaf
Instructions
Wash and cut mini cucumbers into small rounds about 1/4 inch thick.
Place cucumber rounds into a large mason jar or other container.
Put a bay leaf in the side of the jar about halfway down and place minced garlic into the jar on top of the cucumbers.
Stir together water, vinegar, salt, cayenne, and black pepper for about 30 seconds.
Pour liquid mixture over the cucumbers. If the liquid does not cover all of the cucumbers, increase vinegar and water in even proportions until it just covers them all.
Put the lid on top of the container and gently shake to mix the garlic and spices around the cucumbers.
Place the jar in the refrigerator for at least an hour, but a few hours really allows the seasoning to soak into your pickles. These will stay fresh for up to 3 weeks.
